"Bedtime Story" IPA " A sessionable IPA (6.0%) bittered with Millennium and flavour/aroma from Cascade. "

Needed a quaffable beer in the fridge for the fall since I recently ran dry on my Imperial IPA and Amber Rye Ale.

Had a pound of Cascade on hand, so decided to put together a simple IPA using mostly Cascade (including dry hop) with a Millennium bittering charge. I've got an extra oz of Citra in my freezer as well that I may throw in for dry hopping.

This was my first time using Millennium, so I'm interested to see how it'll turn out. The wort tasted great out of the kettle and was a nice rich golden colour on the way to the fermenter—extremely clear as well.

OG was 1.059. Pitched in a 1-litre starter of Wyeast 1056 late Saturday afternoon, the fermenter was bubbling away happily by dinner time.


This one finished out at 1.011. The Cascade/Millennium dry hop combo that I used gave it an awesome aroma and taste. Really looking forward to drinking this one.

Gonna to have to work some Millennium into my next batch it sounds like. Just recently had a nice result with a Simcoe dry hopping and now lookin for my next project. That Amber Rye Ale is sounding like an idea!

Simcoe is great for dry hopping. I was mostly impressed with Millennium's bittering properties—very clean and not harsh at all. It's a cross of Nugget and Columbus, so I guess that's no surprise really. The Amber Rye Ale was a pretty decent brew, but if I was to make it again, I'd do either a partial mash or an all grain version rather than steeping it. Rye really needs to be mashed in order to get the character out of it that you should. This one is disappearing quickly—I think there's only a half dozen bombers of it left. Definitely at it's best after about 3 weeks of conditioning.
