Pumptoberfest " Punkin pie on top of an Oktoberfest "

Ok! First batch of Oktoberfest came out ok I guess. Wasn't as potent as I hoped but definitely drinkable. So, here's round 2! I'm using the same kit for Oktoberfest but adding some pumpkin spice and organic puree . This will be the first time I've modded a kit and I'm pretty excite about it.

I followed the directions but made a few changes this time. Boil duration was 80 minutes and below are the modifications I made.

I had two 1 oz packages of Liberty Hops, the directions say to add both at the beginning but I'm going to add the second 15 minutes before boil end. Hope to get more of a hoppy aroma out it. Why? I don't know.

Pumpkin Spice
I added 2 tsp at the beginning of the boil and a half tsp 15 minutes before the end.

Pumpkin Puree
I added one can of organic pumpkin puree at the very beginning. I was surprised because at first it was chunky but by the end of the boil it was mostly dissolved but a few smaller pieces.

I'm going to let the primary run a little longer than the one week like the kit says, probably more like 2 1/2 - 3 weeks. After that I'm bottling and letting it sit until September/October. If only I had a cave to put it in...

Hopefully there will be a fest in Oktober ;)


Bottling went like a charm last night thanks to my bro in law! Got about 30-ish bottles out of it and 3 2-liters. Gave it a taste and short of it being young it's got a lot of potential with all the pumpkin and spice going on. Happy about this brew so far.

Tasted tester 3 last night. It's a bit more mellowed out. The pumpkin spice is there, not as pumpkin pie-ey as I hoped. In retrospect I would've baked the pumpkin puree first instead of adding it straight to the boil because I read that brings out the sugars and flavors of the pumpkin or something. I probably would've added all the pumpkin spice at flame out too vs most at the beginning of the boil too. I'll see how it progresses over the next few weeks.

After two months the bitter spiciness has subsided and has worked its way into the nose to make for a nice pumpkin spice aroma. Lightly sweet and malty with a clean finish. It's possibly over carbonated though. I used 5g priming sugar but probably should've went with 3-4g.
